The truffière and farm
The Fish River Truffière is a family owned and operated business located in the beautiful O'Connell valley in central west New South Wales.
The Fish River has shaped the landscape around our farm including the the slope and soil in which our truffles grow.
The Truffière is one of the first to be established in the NSW (2007) and has supplied fresh Perigord (Tuber melanosporum) truffles to many of Sydney's hatted restaurants.
We use regenerative methods to care for our pastures and hope to leave our farm to the next generation of farmers better than we found it.
We hope some the love we have for our farm comes across in the many photographs we share on our Facebook and Instagram accounts.
Truffles really are evidence of mother nature’s glory and complexity.
Fish River Truffles are the black Perigord truffle (Tuber melanosporum) and they are available in winter, usually around the second to third week of June.
We think diversity is key to good agriculture and so we have focused on growing our truffles under a variety of trees including hazelnut, French and English oak trees.
Using truffles is an extra ordinary experience in the kitchen. Their unique pungent aroma will give their intoxicating flavor to the dishes you love to prepare.
You don't need to use much, usually 6g per person per dish.
